Oh hey, it’s Fuck Yeah Friday! We’ve got a special guest recipe from Chef Alex of The Roosevelt Hotel in Hollywood - Sautéed Shrimp w/ Chipotle Chimichurri Sauce.
1 lb shrimp (Peeled and deveined. You can leave the tail on)
1 tsp sea salt
1 tsp pepper
1 garlic clove
oil/fat to cook with
Season the shrimp with ingredients above and sauté in coconut oil (if you have duck fat, or bacon fat, you can use that. Why the hell not?). Set that aside and make the chimichurri sauce.
Chipotle Chimichurri Sauce:
1 bunch parsley
2 to 3 garlic cloves
½ cup red onion
2 Chipotle peppers (if you got them dried, soak in warm water until soft)
½ cup extra virgin olive oil
Juice from 1/2 a lime
1 tsp Sea Salt or smoked salt (Maldon)
A sprinkle of Red Pepper Flakes (to taste)
Put everything in a food processor (or chop until minced and then add oil, lime juice, salt and red pepper flakes).
Top the Chi Chi sauce on your scrimps and crush.
