Thank God It’s Fuckin’ Friday! Go big or go home this weekend with this BIG BOY BREAKFAST BURRITO.Ingredients:Plantain Tortillas (recipe via The Paleo Secrethttp://www.thepaleosecret.com/2014/02/08/5-spice-paleo-pulled-pork-tacos)1 tbsp coconut oil1/2 pound of uncased sausage, ground pork or whatever meat you want2 eggs, scrambled with a dash of salt and pepper 1/2 a yam or sweet potato, chopped1 stem scallion, diced1/4 of a red onion, diced2 sprigs of cilantro, diced1 tbps Red Jalepeno Pepper, diced (optional, if you want some heat)Melt coconut oil in a stainless steel pan on medium high and brown the sausage and sweet potatoes for about 10 minutes. Then add the eggs until everything’s cooked. Put the scramble on a plantain tortilla and wrap it up. Top with chopped scallions, red onion, red pepper and cilantro. Cook hard, eat hard.
