We’re going green for this week’s Fuck Yeah Friday with Chopped Chicken Salad with Butter Lettuce Wraps.
1 cup chicken, either breast or thigh meat, chopped 1/2 inch thick
2 strips bacon, chopped up into bits
1/4 cup sliced sun-dried tomatoes in EVOO
1/4 cup kalamata olives, sliced
1/2 avocado, chopped 1/2 inch thick
1 cup arugula
3 tbsp lemon juice
1/3 cup extra virgin olive oil
1 clove garlic, finely minced
Salt and Pepper to taste
Butter Lettuce to wrap (approximately 8 leaves)
Wash butter leaves and set between paper towels to dry.
Put all the ingredients for the salad in a large bowl and set aside.
Combine all the ingredients for the dressing in a small bowl except for the EVOO. Slowly pour the olive oil in the bowl while whisking. Pour the dressing over the salad and toss well. Serve with butter lettuce leaves.
